For the Batter:

1 cup butter, room temperature

1 cup Florida Crystals® Organic Raw Cane Sugar

2 eggs, room temperature

1 tsp vanilla extract

2 cups gluten-free 1:1 all-purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp sea salt

1 cup sour cream

For the Filling:

1 cup walnuts, chopped

1 cup pecans, chopped

1 cup Florida Crystals® Organic Raw Cane Sugar

1/2 cup Florida Crystals®Organic Light Brown Raw Cane Sugar

2 tsp cinnamon

Instructions

Step 1

Preheat oven to 350F degrees.

Step 2

In a large mixing bowl, start with just the batter ingredients and using an electric hand mixer, beat together the butter and 1 cup Florida Crystals® Organic Raw Cane Sugar until light and fluffy. 

Step 3

Add in the eggs and vanilla extract and mix until incorporated. 

Step 4

Next, add in the flour, baking soda, baking powder, and sea salt. Mix well.

Step 5

Then, add in the sour cream and mix until everything is smooth and incorporated. 

Step 6

Using a sharp knife, chop the nuts into small pieces. 

Step 7

In a small bowl, combine the filling ingredients: walnuts, pecans, 1 cup Florida Crystals® Organic Raw Cane Sugar, ½ cup Florida Crystals® Organic Light Brown Raw Cane Sugar and the cinnamon and mix together well. 

Step 8

Spray a 9in baking pan with oil or spread with butter.

Step 9

Add half the batter to the pan and level out on the bottom of the pan. 

Step 10

Next, add in half of the filling ingredients and make sure it covers all the batter. 

Step 11

Repeat again with the rest of the batter first and then the last of the filling mixture on top. 

Step 12

Bake the coffee cake at 350F degrees for about 60 minutes.

Step 13

Make sure to check the cake around 50 minutes and bake until a toothpick comes out clean.

Chef's Tip

You can also use an 8in pan for the coffee cake. If you do, follow everything exactly, but make sure to adjust your baking times. It will likely take longer to bake through. The cake will take anywhere from 65-75 minutes. Check cake around 60 minutes and bake until a toothpick comes out clean!
