For the Mango Habanero Sauce
  • 2 tablespoons Vegetable oil
  • ½ medium Yellow onion, minced
  • 3 cloves Garlic, minced
  • 2 medium Fresh ripe mangoes, chopped
  • 1 cup Mango juice
  • ¾ cup Florida Crystals® Organic Raw Cane Sugar
  • ½ cup Apple cider vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Ground mustard
  • ½ teaspoon Ground ginger
  • ¼ teaspoon Ground black pepper
  • 3 medium Habanero peppers, stemmed and seeded
For the Cauliflower Wings
  • 1 Cauliflower head
  • ¾ cups All-purpose flour
  • ½ teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Ground black pepper
  • ¾ cup Almond milk
  • 1 teaspoon Vegetable oil
  • Fresh chives, as garnish
Instructions

Step 1

Prepare the mango habanero sauce. Heat oil over medium heat in a medium saucepan. Add onion and cook until it becomes translucent, about 5 minutes. Add garlic and mangoes and cook for 3 minutes. Stirring occasionally. Add mango juice, sugar, vinegar, salt, mustard, ginger, pepper, and habanero peppers. Bring the mixture to a boil. Reduce the heat and simmer the mixture for about 30 minutes or until sauce has slightly thickened. 

Step 2

Using an immersion blender, blend the sauce until smooth. If you do not have an immersion blender, transfer the sauce to a blender and blend until smooth.

Step 3

Prepare the wings. Preheat oven to 450°F. Line one baking sheet with parchment paper.

Step 4

Break cauliflower head into florets.

Step 5

In a medium bowl, combine flour, paprika, salt, pepper, almond milk, and oil. Add cauliflower florets into the batter and evenly coat all the pieces. Place the florets on top of the prepared baking sheet and bake for 25 minutes or until golden brown. 

Step 6

Toss the wings with 1 cup of mango habanero sauce. Place in a serving platter and garnish with chives. Serve with extra sauce on the side and pieces of celery.

Chef's Tip

Use gloves to handle habanero peppers, these peppers are extremely hot and may cause a burning sensation on the skin.
