  • 8 tablespoons Unsalted butter, at room temperature
  • ¼ cup Hazelnut spread
  • 1 ½ cups + 2 tablespoons Florida Crystals® Organic Powdered Raw Cane Sugar
  • 1 cup Cocoa powder
  • ¼ cup Port wine
  • 1 teaspoon Pure vanilla extract
  • ¼ teaspoon Salt 
  • 2 ¼ cups Digestive biscuits, roughly crushed
  • ¼ cup Pistachios, roughly chopped
  • ½ cup Hazelnuts, previously roasted and roughly chopped
  • ¼ cup Dried cherries, roughly chopped
Instructions

Step 1

In a large bowl, beat butter and hazelnut spread at medium speed until well combined.

Step 2

Add 1 ½ cups of sugar, cocoa powder, port wine, vanilla, and salt. Mix at low speed until combined. Add cookies, pistachios, hazelnuts, and dried cherries. Mix at low speed until just combined.

Step 3

Divide the mixture in half. Shape each portion into 10-inch logs. Wrap each log on a large piece of parchment paper. Roll back and forth until smooth. Twist the ends of the parchment tightly. Wrap the logs in aluminum foil. 
 
Step 4

Place in the refrigerator for at least 2 hours. Remove from the refrigerator and before serving, dust all sides with 2 tablespoons of powdered sugar. Using a serrated knife, cut the logs into ¼-inch slices. Serve.

You can substitute the port wine with apple or grape juice.
